What's a fun or unusual fact about you or your company?

At Chayote, our kitchen runs on family values, good vibes, and a love for bringing people together. Inspired by Latin culture, we treat every event like a celebration—full of flavor, warmth, and just the right touch of fun.

How did you get started as a wedding pro?

It all started when clients who loved Chef Mario Pagán’s food began asking if we could cater their weddings. From there, our team jumped in, and we quickly fell in love with the excitement of weddings—helping couples create amazing, memorable experiences with great food and seamless service. What began as a few special requests turned into one of our favorite things to do, and we’ve been making weddings unforgettable ever since.

Share a piece of advice to reduce stress in the wedding planning process.

From our experience, one of the best ways to cut down on wedding planning stress is by hiring a caterer and planner you truly trust. When you have a team who knows what they’re doing, especially in the food and event planning areas, it makes everything feel so much easier. At Nueva Mesa, we love taking that stress off couples' plates—literally and figuratively—so they can enjoy the process and, most importantly, their big day. When you’re in good hands, it really lets you focus on what matters most.

What's your favorite wedding tradition and why?

One of our favorite wedding traditions is the first dance. It’s such a beautiful moment where the couple takes a pause to truly enjoy each other and the significance of the day. It marks the beginning of their marriage and the journey ahead, while also reflecting the love and support of everyone there to celebrate with them.
