It gives us great pleasure to introduce this week’s vendor spotlight, Lucy Ayerbe of Sofelle Cake Artistry.
When people ask “what do you do?” how do you answer?
I make art out of cake! Beyond being a cake artist though, I am a pastry chef first and foremost, so balancing flavors, textures, and mouth feel is equally as, if not more important than, making a pretty cake.
What did you do before you did this?
I’ve been a pastry chef for over 20 years. I migrated to this art field from another art field – Theater Arts! I lived in NY City for 12 years where I studied theater and began my love affair with pastry arts in the later part of my time there.
When and how did you get into the wedding industry?
I began Sofelle Cake Artistry when I decided to take my chef career in a more family-friendly and balance-of-life way. It has permitted me to continue to do what I love, which is playing with food in an artistic way, as well as developing and improving upon formulas, techniques, and flavor palettes.
What is your favorite thing about what you do? What’s your WHY?
I always say my favorite part of what I do are “the book ends”! The very beginning, where I get to meet and hear each couple’s story and together design the vision they have for their cake, then the very end, where I get to the venue and put together that vision!
What motivates you to do this every day?
If truth be told…I’m not motivated every day! But as I see how the project is coming together, it just gathers momentum and I am excited to see the final product at least as much as my clients are. I love trying new things and working with different techniques. I also enjoy the “people” aspect of the business: speaking with my clients, getting to know them, and seeing them as people and not just as someone who hired me to make a cake.
What is the best compliment you’ve received from your clients?
What one of my most recent brides said about me on a review: “I almost broke into tears when I saw my wedding cake for the first time on my wedding day! Lucy captured the exact modern elegance that I was looking for.” Wow, that really made my heart feel amazing.
How did you decide on the name of your company?
I named it after my two biggest fans, my daughters (Sophia and Ellie).
What is important for clients to know about your company before they book you?
I am customer service and quality driven. I will give each of my project personalized attention and I take on a limited amount of projects per week.
What types of events do you specialize in?
About 90% of my work is for weddings. I do some corporate events as well as special occasions.

The ones that are enthusiastic, hopeful, honest, and willing to trust me with their vision.
Why do couples hire you?
Most couples hire me because I am patient, professional, and take the time to understand what they are envisioning and not what “I” want to do.

Bella Collina – It is absolutely beautiful and breath-taking. I always enjoy talking “shop” with their pastry supervisor, who often comes out to see what cake I am bringing in that day.
Cypress Grove Estate – The staff is always so helpful and great team players, and also a gorgeous place for a wedding.
